Dragon Phoenix Wine Consulting was co-founded by Fongyee Walker MW and Edward Ragg MW in Beijing in 2007.

Specialists in wine training and professional tasting, Fongyee and Edward share over thirty years of teaching experience
having taught at Cambridge and Tsinghua Universities. Edward and Fongyee are joined by a team of passionate wine trainers, all former DP students, delivering programmes across China.

Dragon Phoenix also provides independent wine consultancy services working with the China
trade as well as private consumers, corporate groups, international wine companies, individual wineries, wine trade bodies and
clients requiring detailed market research.

Edward Ragg MW

Co-Founder

Edward is a poet, literary critic, wine writer and wine trainer. 

He became a Master of Wine (MW) in 2019, following completion of his MW research paper on China’s major importers and their portfolio management strategies during 2008-2018. He won the Robert Mondavi Winery Award for the best performance across the MW Theory examinations and the Quinta do Noval Award for the best MW research paper. With Fongyee Walker MW, Edward has acted as a Tutor of the WSET Level 4 Diploma in mainland China. He is also a Certified WSET Educator/Assessor and holds SWE and Court of Master Sommeliers qualifications.

Edward was previously the first foreigner to be appointed an Associate Professor in the Department of Foreign Languages & Literatures (est. 1926) at Tsinghua University where he taught literature in English and established the university’s first wine course and the Tsinghua University Wine Association (est. 2012). He is an internationally recognised expert on the work of American poet – and Burgundy tippler – Wallace Stevens (1879-1955). In 2017 he left Tsinghua to pursue his writing and career in wine.

Edward has written for The World of Fine Wine Magazine, Decanter Magazine, Tong Magazine, La Revue du Vin de France (China), The Drinks Business, Harpers Wine and Spirit, Meininger’s Wine Business International and Spirito diVino Asia, among other titles. He is co-author (with Fongyee) of The Cambridge University Guide to Blind Wine Tasting (2004, rev. 2006, 2010, 2012, 2015, 2017, 2018, 2019).

A former Captain of the Cambridge Varsity Blind-Tasting Team (2001), Edward began judging wine at the International Wine Challenge (UK, 2005). He has judged for leading Chinese magazines and at Chinese wine challenges (Shanghai International Wine Challenge, Wine 100, International Wine Challenge China). He was guest international judge at the McLaren Vale Wine Show (2012) and also judged at the Perth Royal Wine Show (2017). In 2019 he returned to the Perth Royal Wine Show as guest international judge.  In addition, he is the Chinese wine reviewer for The Wine Advocate.

Fongyee Walker MW

Co-Founder, MD & Chief Educator

Fongyee Walker MW is mainland China’s most qualified wine trainer having passed her Master of Wine (MW) examinations on top of years of experience as a teacher in various fields.

She has worked as a WSET Certified Educator and Assessor teaching all over China; and is the only other wine educator in mainland China (with Edward Ragg) permitted to teach the WSET’s flagship qualification, the Level 4 Diploma in Wines. As winner of the Errazuriz Award for the best performance in the MW Business of Wine Paper (2016), she is especially interested in global markets and global trends.

Fongyee is a Mandarin Chinese-English wine training specialist and popular TV presenter. She is the only person in Asia permitted to teach Germany’s VDP Association courses and is a Riesling Fellow of the German Wine Institute. Fongyee also works with a wide range of other trade bodies and individual wineries.

A popular wine presenter, who played a significant part in the wine documentary film Red Obsession (2013), Fongyee created her own food-and-wine show Wok ‘n’ Wine travelling China to explore regional cuisines and wines from all over the world. Wok ‘n’ Wine had over 4 million views in its first season on various Chinese platforms.

An experienced wine judge, Fongyee judges for leading Chinese magazines, select Chinese wine shows and internationally. Recent and pass appearances include: the Royal Melbourne Wine Show, the Wines of Chile Awards, the Hawke’s Bay Wine Awards, the Old Mutual Trophy, the Qantas Wine Show of Western Australia, the Limestone Coast Wine Show, the Langhorne Creek Wine Show and Canberra International Riesling Challenge. Fongyee is also a former consultant to Air New Zealand, has co-chaired of Shanghai’s Wine 100 competition and selects the wines for mainland China’s first subscription wine club service SigWine.

Fongyee writes for several Chinese and international wine publications and is co-author (with Edward Ragg) of The Cambridge University Guide to Blind Wine Tasting (2004, rev. 2006, 2010, 2012, 2015, 2017, 2018, 2019).

Studying for and completing the WSET Diploma Award in Wines and Spirits at Dragon Phoenix was not a particularly difficult experience, but it was never easy! Fongyee’s analysis of the WSET Level 4 Diploma course structure is very important and highlighted to me how, although each unit is independent, the learning is holistic.
